For the study, published in the ‘PLoS ONE online journal’, the group led by Whitehead conducted a research on the consumption of fruits and vegetables for six weeks in 35 people. They found that skin color turns reddish and yellowish with increasing consumption of fruits and vegetables.
It is an effect of carotene, Whitehead said. “It is a red / yellow pigment that is distributed to the skin surface when eating fruits and vegetables,” he said.
Skin color changes caused by the consumption of fruits and vegetables is associated with a second experiment that enhances the appeal. It shows that skin color reflects better health. “Conversely, those who consume less fruit and vegetables become more pale,” said Whitehead.
“Since long time I said that ‘we are what we eat’ and it appears on your skin,” says Dr. Doris Day, a dermatologist at Lenox Hill Hospital in New York City.
Day asserts, there are many studies that shows that foods high in antioxidants – such as olive oil, nuts, fruits and vegetables – also helps to maintain skin changes and fight against skin cancer. The same is obtained by reducing red meat and dairy products.
